Excer-SIZE & get your Ass off the Couch Hummus

Does anyone else get uninspired about what to blog about sometimes?  Ever feel like you sit down and your mind is blank?  I call this my – Too Comfortable-Sitting-Vegging-On-The-Couch-Mode.   Gotta get out of this habit – so easy to get into!  They say to create a habit it takes 3 weeks, hmmm, so I’m thinking the 3 weeks left in April are my 3 weeks to turn my bad habits back into good ones!

Last weekend I catered the Grand Opening of Royally Fit Fitness Boutique in Bowmanville, owned and operated by Ashley Dale Roy – who has been  my bootcamp instructor and general ass kicker on and off over the last few years.

To combat my non-committal  to a topic and laziness this week and in an effort to get my ass off the couch (somehow I fell off the exercise wagon lately) – I am challenging myself OUT loud and announcing it to you (harder to get out of the commitment this way).  I’ve decided to make a commitment to get my ass out to at least 3 of the classes offered at Royally Fit.  There are 4 that I want to try this month, but I need to make it out to 3 this week (or in a time pinch make it out to 2 and go for a run for a 3rd workout).

The classes that I want to take are: Kettlebell Ass Kicker  for cardio, strength & flexibility, Flashdance for fun my core, and stress relief, Piloga for abs and stretching and UGI Fit for a full on total body workout in 30 min (plus time for stretching).  Which ones would YOU do?

So there I said it – now I have to do it!  Right? Right!   Anyone want to join me?

After a workout – its aways a good idea to snack on something with a protein and a carb (no a hamburger does not count!!) Here is my Get Your Ass  off the Couch to get the Humus reward recipe.

Spicy-Garlicky-OH-SO-Good Humus

  • 1 Can of chick peas, retain 1/2 of the water in the can, drain and rinse the rest of the chick peas
  • 2 TB Tahini
  • Juice of 2 lemons
  • 1 TB minced garlic
  • 1/4-1/2  tsp salt
  • black pepper to taste
  • chipotle chili powder OR 1 chipotle chili & 2 TB adobe sauce
  • raw carrots for dipping

In a  food processor (I would refrain from using a mini processor as you may burn out the motor), add all ingredients and process for about 1-2 minutes or until smooth. Adjust seasoning as needed.  Cover and refrigerate, for a 1/2 hr -1 hr before serving to let the flavours come together.  (Recommended but not necessarily).  Will keep in the fridge for a few days.   Serve with raw veggies, pita’s or crackers!  Also great in a sandwich with some red onion.  enJOY,

Wake up with Seriously Easy Better Pancakes

Let me clarify my title – wake up with coffee (or if you are NOT a morning person like me – about 4 coffees)  then proceed to making better pancakes! I know – there’s lot of people out there saying – pancakes – easy – grab the box out of the cupboard add some milk and Bob’s your uncle (well not my uncle but someone’s uncle I am sure)… whenever I hear this or see someone in the grocery store grabbing a box of mix I want to stop them and say “Do you realize how easy it is to make pancakes from scratch?”  and “No – it really takes no longer than making it from the box”.  The difference 2 bowls instead of one and of course the taste.  Not to mention you can actually see what is going into your pancakes.  This is my Seriously Easy Better Pancakes recipe.

Seriously Easy Better Pancakes

  • a touch less than 3/4 c milk + 2 TB white vinegar (mix together and let sit to sour it, while you mix the dry ingredients together) or buttermilk (ideally you want 1 1/2TB less than 3/4 cup)
  • 1 cup all purpose flour
  • 2TB sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 egg (beaten)
  • 2TB butter – melted
  • wet ingredients to dry ingredients.  Mix.  Add jam.  (you can make t1 tsp vanilla (try to get real vanilla not extract)
  • 3TB strawberry, raspberry, blueberry or your favorite homemade jam
  • Mix the milk & vinegar, and let sit. In another bowl, mix all dry ingredients together and whisk together to mix and remove and lumps (or sift).  Add butter, vanilla and egg to milk & whisk.  Add to dry ingredients and whisk.
  •   Heat pan on Med – High (on my stove that’s about a 6), add cooking spray, mist with EVOO or add butter.  Pour some batter onto hot pan. Flip part way thru cooking.  You will know when to flip pancake when the batter gets bubbles in the middle.
  • Top with butter and serve – as an added treat sprinkle with powdered sugar.  These are sweet & delicious – you may want to try them before adding syrup.

Hint:  Make extra so you can wrap them up and freeze – pop them in the microwave for 1 minute in the morning for a breakfast on the go during the week.   enJOY .

What am I all about?

Well I think its high time, since I’ve had this blank blog for almost a month now to create something profound and important and share with you all …. wait – I don’t really have anything profound to blog about – important?  well I guess that all depends on who’s reading!  Welcome to my blog – I write about the things that are important to me – nutrition, and well living whilst dabbling in a bit of humor and story telling (all true!!) wanna come along for the ride?  Fasten your seat belt here we go!

An intro might be in order – as much as I’d love to say I was fun, fit, and fabulous  – I’d be fibbing (see that literary skill with alteration pretty impressive eh?) so I will go with a definite fun and fabulous and striving to be fit.   O ya – I happen to be Canadian too (just in case you didn’t catch the “eh” at the end of my last sentence).  Of course I do have 2 young children, a husband and am starting a business,  so sometimes I’m just having a fit, or fit to be tied or not “fitting” into an outfit … But then I digress…. so besides being a typical time crunched mom I also used to be a commuter – used to be is the key there – ahhh there’s something to be missed about sitting in traffic breathing in environmental toxins and elevating your blood pressure for 3 hours a day isn’t there? – (Ya like you miss having a root canal).

When I decided to leave my corporate job and go out on my own I thought hmmm, what interests me?  What am I good at?  Well I love cooking so I started there.  I looked at my past situation – that being no time to do anything let alone nutrition – I mean I know its important but who the heck has time to whip something up after work before taking the kids to swimming, dancing, gymnastics or whatever else maybe on the agenda?  So I looked around – and hey wow there were lots of people just like me! I started doing some market research and found out some interesting stuff I mean facts.   Like – how about the fact of the 100 ish families  I surveyed 47% of them eat take out, or hit the drive thru 1-2 times a week for dinner 19% go thru 3-4 times a week.  Wow!  Then those same people stated that they check the nutritional breakdowns in the food they buy and are concerned about sodium, fats, and cholesterol and overall nutrition. Whaaaa?  Does anyone else see a contradiction here?   Everyone knows its bad but save from making things yourself, there just aren’t a lot of options out there.   This spoke to me – actually jumped up – slapped me in the face, wiggled its butt and shouted to me – WOOOOO – Girl I think you are on to something here … and thats how my story begins….
